It has a similar consistency as rice, can be used as a side dish, is a complete protein, has phosphorus, is high in magnesium and iron, with dietary fiber, gluten free, and ALL the amino acids. I don't have to watch it, and I know the rice will be warm and ready whenever the rest of the meal is.
